2 large baking potatoes
1/2 pound bulk Mexican sausage or chorizo
1/2 cup finely chopped onions
4 eggs
1 avocado, sliced
grated cheddar and/or Monterrey Jack cheese
Dice potatoes in about 1/4 inch squares. Brown sausage until lightly browned. Add diced potatoes and onion. Cover and cook over medium heat until potatoes are tender. Remove lid and make 4 round dents in the mixture. Break an egg into each dent. Sprinkle grated cheese over this. Cover and cook until eggs are set and cheese has melted. Garnish with avocados.
