3 Cups All Purpose Flour
3 cups Cake Flour
1 1/2 T Baking powder
1 1/2 t Baking soda
1 T kosher salt
1/4 t cream of tartar
1 pound butter (4 sticks)
3 Cups Buttermilk
Sift Baking soda, baking powder, salt, cream of tartar, and both flours together. Cut cold butter into chunks. Add butter to flour mixture in a stand mixer or by hand. Mix very little.....the idea here is big chunks of butter so work it in firmly leaving at least nickle size chunks. Pour in buttermilk, mix until moistened. Turn onto well floured board do not roll out..... smooshing the butter chunks now would just suck! cover with a little flour and cut with 3 inch biscuit cutter. Bake at 450 degrees 15 minutes or untill brown and flakey.
