Andies Spinach and Artichoke Dip


Ingredient List:

2 jars hot marinated artichoke hearts (dice)
1 package frozen chopped spinach (thawed and drained)
2 8 oz packages cream cheese
4 oz sour cream
1/4 cup real mayonnaise (do not mess up this dip with miracle whip!)
2-3 tablespoons garlic (minced)(sweat in a little olive oil)
2 packages fresh shredded parmesan/ramano cheese

Preparation Instructions:

Mix all ingredients together and bake at 350 in a greased casserole, stirring occasionally for 30 to 40 minutes.
This may take less time but just cook till bubbly through. Over-baking will dry this out. Serve with tortilla chips.

** Variation**
Sweat 1/2 a yellow onion (diced) and the garlic from above in 1 tablespoon of bacon grease or olive oil. When translucent, add two cans of crabmeat and sauté until barley brown. Add to dip before baking. Serve with tortilla chips.
