Canadian Bacon Pie


Ingredient List:

2 pie crusts
1/2 pound Canadian bacon
8 eggs
3 green onions, finely chopped
1/2 tsp salt
1/4 tsp pepper
1 tbls milk

Preparation Instructions:

Line a quiche dish with 1 pie crust; arrange half of bacon on bottom. Break 7 eggs into the dish.
Pierce egg yolks with a fork - do not mix! Add green onions, salt and pepper. Top with remaining bacon. Cover with second pie crust. Beat last egg with milk; brush pie with mixture. Bake at 400F oven for 30 to 40 minutes. Serve warm or cold.
