3 large eggs
1/2 cup buttermilk
1/2 tsp. dried thyme
1/2 tsp. salt
1/8 tsp pepper
3 green onions, finely chopped
dash of hot sauce
6 slices white bread, cut diagonally
2 cups instant potato flakes
6 Tbsps. butter
Combine first 7 ingredients. dip bread in mixture and dredge in potato flakes.
Melt 2 Tbsps. butter in a large skillet. add 4 bread triangles and cook over medium-low heat until golden brown. Repeat procedure with remaining bread.
