1 1/2 lbs uncooked lean ground beef
1 large chopped onion
1 large chopped green pepper
1 chopped jalapeno pepper
1 1/4 cups soft bread crumbs
1 beaten egg
1 tlbs parley flakes
1 tsp basil
1 tsp Italian seasoning
1 tsp salt
1/8 tsp pepper
2 8 oz divided tomato sauce
2 medium coarsely chopped tomatoes
4-5 medium zucchini
2 cups shredded mozzarella cheese
In a large bowl combine the first 11 ingredients and one can of tomato sauce; mix well. Stir in tomatoes halve zucchini lengthwise; scoop out seeds. Fill with meat mixture; place in two 13x9x2 in. Baking dishes. Spoon remaining tomato sauce over each. Bake uncovered at 375 degrees for 45 minutes or until zucchini is tender. Sprinkle with cheese during the last few minutes of baking.
