Stuffed Red Peppers


Ingredient List:

3 red bell peppers
1 1/2 tsp extra virgin olive oil
1 1/2 tbs balsamic vinegar
1 clove minced garlic
freshly ground pepper
3/4 lb stemmed and halved cherry tomatoes
1 cup cubed mozzarella cheese
1/2 cup cut in thin strips fresh basil leaves

Preparation Instructions:

Cut the peppers in half lengthwise. Remove seeds and the ribs. Cut thin slice from bottom side to level if needed. Place in non-stick baking pan. Set aside. Preheat oven to 375 degrees. In a large bowl whisk together first four ingredients. Add tomatoes, cheese, and basil. Toss to coat. Stuff each pepper with mixture. Place in oven to bake, until the peppers are tender, about 40 minutes.
