4- 5 cups shredded iceberg lettuce
1 medium thinly sliced cucumber
1 cup fresh bean sprouts
1 can 8 oz drained and sliced water chestnuts
1/2 cup thinly sliced green onions
1 lb halved fresh pea pods
4 cups cubed cooked chicken
2 cups mayonaise
1 tlb sugar
2 tsp curry powder
1/2 tsp ground ginger
cherry tomatoes
fresh parsley sprigs
Place lettuce in the bottom of a 4 qt glass salad bowl. Layer withcucumber, bean sprouts, water chestnuts, onions, pea pods and chicken. In a small bowl, combine mayonaise, sugar, curry and ginger. Spread over the top of salad. Garnish with cherry tomatoes and parsley. Cover and chill several hours or overnight.
